AIR FRYER MEATBALLS WITH CREAMY WHITE SAUCE


AIR FRYER MEATBALLS WITH CREAMY WHITE SAUCE

Ingredients:

Meatballs:
-250g ground beef
-1/4 tsp garlic powder
-1/2 tsp salt
-1/4 tsp black pepper
-1 egg
-1 tbsp flour
-3 tbsp breadcrumbs
-3 tbsp Parmesan cheese

Creamy Sauce:
-200ml cooking cream
-1 tbsp unsalted butter
-1 tbsp olive oil
-minced onions
-1 cup chicken stock or beef stock
-3 tbsp Parmesan cheese
-1/4 tsp salt
-1/4 tsp dried basil
-1/4 tsp salt to taste
-sprinkle of ground black pepper

Cooking Time:

- 160C for 12min

Directions :

1. Combine the meatballs ingredients. Mix them all using your hands until incorporated.
2. Grease hands with water, and scoop about 1 tablespoon of the mixtures. Shape into a ball.
3. Place it in a plate with parchment paper. Cover with plastic wrap and chill for at least 30 minutes.

4. Align the meatballs in air fryer basket, and spray with cooking oil.
5. Air fry at 160C for 12 minutes. Leave the meatballs inside the air fryer while preparing the sauce.
6. For the sauce, heat pan at low heat and add oil. Sauté minced onions until translucent.
7. Meat the butter and add the flour. Stir it until flour is cooked and light brown.
8. Pour the chicken stock. Season with dried basil and black pepper. Then, pour the cooking cream and Parmesan cheese. Continue mixing until lightly thickens. Season with salt.
9. Add the meatballs, simmer a little bit until thickened.
10. Serve hot and enjoy!!

AIR FRYER RECIPE: PEACH UPSIDE-DOWN CAKE/LIGHT AND SOFT UPSIDE DOWN CAKE IN AIR FRYER/DESSERT RECIPE


PEACH UPSIDE DOWN CAKE

Light and soft upside-down cake baked in Air fryer, that are so easy and delicious snacks/ dessert.


Ingredients:

- 3 tbsp light brown sugar o white sugar (60g) 
- 1 tbsp water (10g) 
- 1/2 tbsp unsalted butter (10g) Chiffon Cake: 
- 2 egg yolks 
- 3 tbsp powdered sugar (24g) 
- 1/4 cup cake flour (40g) 
- 1 tbsp vegetable oil (10g) 
- 1/4 tsp salt 
- 1/2 tsp baking powder 
- 3 tbsp milk (45g)
- 2 egg whites 
- 3 tbsp powdered sugar (24g) 
- ½ tsp lemon juice

Cooking Time:

- 140C for 45min (with foil)
- 140C for 5 mins (without foil)


Notes:

- Preheat airfryer at 140C for 5 mins. 
- Bain Mare method for the baking process in air fryer. This to prevent the cake from cracking, pour hot water in a large pan. The water helps to circulate the heat and keep the moisture of the cake. 
- Do not open the air fryer until the ends of the baking time, to prevent cake from collapsing. 
- Cover the pan with foil to prevent the cake from burning. 
- Cake is done when inserted sticks comes out clean. 
- After baking, keep the cake in the air fryer (basket open) for 10 minutes. This is to prevent the cake from sinking. 
- After 10 minutes in the air fryer (open), let rest at room temperature for another 10-15 minutes before inverting. 
- Do not overmix the cake batter. Just maintain the air / volume from the beaten egg whites.

AIR FRIED PORK CUTLET / CRISPY PORK CUTLET / HOW TO MAKE CRISPY PORK CUTLET / PORK RECIPE


PORK CUTLETS:

Pork Cutlet are usually lean part of the pork that has been pounded thin and coated with breadcrumbs to make it crispy. Also, I made a gravy as dipping sauce for additional flavor.


Ingredients:
-250 pork collar (may also use pork chop)
-egg
-flour and cornstarch (combination)
-1/4 cup milk
-salt and pepper
-breadcrumbs

Dipping Sauce:
-2 tbsp unsalted butter
-1 1/2 tbsp flour
-1 ¼ cup chicken stock
-1 tbsp soy sauce
-1 tbsp ketchup
-1 tsp sugar
- salt and pepper to taste

Cooking Time:
-180C for 15-17 mins or until golden
Brand: Philips XXL

Notes:
-spray the breaded pork with olive oil or any oil you prefer
-flip the pork after 10 mins, then spray again with oil.
-slice the pork about ¼ thick
- chill the pork cutlet for at least 30mins before air frying to make it crispier.

Airfried Potato Dinner Rolls


AIR FRIED POTATO DINNER ROLLS

Turn your left-over mashed potato into soft and fluffy bread rolls. Mashed potato added moisture to the dough and resulted into airy and soft bread. 
 

Ingredients: 

- 1 ¼ tsp active dry yeast (you can also use instant dry yeast) 
- 1 tsp sugar
- 80g warm milk
- 250g bread flour 
- 45g powdered sugar 
- 40g powdered milk 
- 30g vegetable oil 
- 1/2 tsp salt 
- 60g finely mashed potato
 

Egg wash: 

-1 tbsp milk and 1 egg yolk 
 

Cooking Time: 

Air fryer: 
140C for 15mins 
 

Notes:

-Pre heat air fryer at 140C for 5 mins. 
-each dinner rolls weigh 40-43g 
-yield of 16 dinner rolls 
-cover the dough while shaping to prevent from drying out 
-to make mashed potato, boil potato until tender, then mash using fork or food processor. 
 

 

AIR FRYER RECIPE: POTATO POPPERS

 

POTATO POPPERS 

Crispy and delicious potato pops coated with potato chips!! 

Ingredients: 

-2 medium potatoes 
-1 egg yolk 
-2 tbsp unsalted butter 
-1/4 tsp dried parsley 
-1/4 tsp black pepper 
-1/4 tsp garlic powder 
-1/4 or ½ tsp salt 
**please reduce the salt if using salty potato chips 
-2 tbsp potato starch or cornstarch 
-1/2 cup all purpose flour 
-cheddar cheese for the filling (optional) 
-1 beaten egg 
-finely ground potato chips (sour cream flavor) you use any flavor you want 
-flour 
 

Cooking Time : 

Airfryer:

160C for 15 mins

Notes: 

-chill the potato mixtures for at least 30 mins 
-for crisper potato pops, chill them for 30 mins before air frying 
-you can make this potato pops ahead. Put it in a zip lock bag, and keep in the freezer.

AIR FRYER RECIPE : CHEESY GARLIC BREAD / NO KNEAD SOFT AND FLUFFY BREAD / AIR FRIED BREAD

 

 

CHEESY GARLIC BREAD (NO KNEAD DOUGH)

Soft and fluffy bread even without the kneading process or any electric mixer. You just need time and patience when doing this. Anyway, it is really worth it when you successfully made it.  

Ingredients: 

- 1 ¼ tsp yeast 
- 1 tsp sugar 
- 1/2 cup warm water 
- 3/4 cup bread flour 
- 1 tbsp sugar 
- 2 tbsp vegetable oil 
- 1/4 tsp salt 
- 1 tbsp fresh parsley 
- 1/2 cup grated cheese 
- 1/4 cup mozzarella cheese BUTTER Mixtures: 
- 1 tsp grated garlic 
- 2 tbsp unsalted butter at room temperature 
- 2 tbsp fresh parsley
 

Cooking Time: 

Airfryer:

150C for 15 mins

Notes: 

-Preheat air fryer at 150C for 5 mins 
-if you don’t want any garlic tidbits, you may substitute it with garlic powder 
-no knead dough needs more time of fermentation, so be patient in waiting


AIR FRYER RECIPE : AIR FRIED PORK RIBS / PORK BBQ RIBS / FALL-OFF-THE-BONE RIBS / PORK RECIPE


AIR FRIED PORK RIBS 

Tender and juicy pork ribs marinated with carbonated drinks that helps in tenderizing the meat and enhancing the flavors. 
 

Ingredients: 

Marinade sauce: 
- 1 ½ cup Sprite (lemon-lime flavor) 
- 1/4 cup honey 
- 3 tbsp brown sugar 
- 3 tbsp soy sauce 
- 1/4 tsp black pepper 
- 1 pc bay leaf 
- 1 tsp salt 
- 3 cloves of garlic 
 
Dry Rub: 
- 1/2 tsp black pepper 
- 1/2 tsp garlic powder 
- 1/2 tsp paprika 
- 1/2 tsp salt 
- 1 tbsp brown sugar 
 
BBQ sauce: 
- 2 tbsp ketchup 
- 1 tbsp honey 
- 1 tbsp from reserved juices/oil from baked ribs 
 
 

Cooking Time:

Airfryer:
160C for 1 Hour and 20 Mins (80 Mins) or Until Tender (with Foil) 
160C for 5-10 Mins (without Foil) Brush with BBQ Sauce
Airfry until you have reach the desired color
 

Notes: 

-Remove the ribs membrane. Membrane is chewy, tough, and preventing the ribs from absorbing the flavor of the marinade sauce.
-Wrapping the pork ribs will speed up the cooking process. It helps the meat more tender and juicier. -Marinade sauce will tenderize the meat and added flavors. I suggest to marinate it overnight for more tastier and juicier pork ribs. 
-Cooking process may vary depend in the size of the meat.

AIR FRYER RECIPE: AIR FRY BREADSTICKS / CRISPY BREADSTICKS WITH CHEESE DIP / EASY SNACKS


 

BREADSTICKS 

A simple, easy recipe yet crispy and delicious breadsticks that are so addictive once you have taste it. 
 

Ingredients: 

Yeast mixtures: 
-1 ¼ tsp active dry yeast 
-1 tsp sugar 
- ½ cup warm water 
 
Dough: 
-1 cup bread flour 
-1/4 tsp salt 
-2 tbsp Parmesan cheese 
-1 tsp dried parsley 
-1 tbsp sugar 
-2 tbsp olive oil 
 
Dipping Sauce: 
-1 tbsp unsalted butter 
-1 tsp flour 
-3/4 cup milk 
-1/2 cup cheddar cheese

AIR FRYER RECIPE: AIR FRY ONION RINGS / CRISPY ONION RINGS / EASY RECIPE


ONION RINGS 

Crispy and delicious Onion Rings that are so easy to make. Instead of using breadcrumbs, I replaced it with potato chips for an extra flavor 
 

INGREDIENTS: 

-sliced white onions 
 
BATTER: 
- 1/2 cup fresh milk 
- 1/2 tbsp lemon juice 
- 1/2 cup flour 
- 1/4 cup cornstarch 
- 1/4 tsp salt 
- 1/4 tsp paprika 
- ¼ tsp dried parsley 
- grind potato chips (sour cream flavor) (may choose any flavor you like) 
 

Cooking Time: 

Airfryer:
180C for 10-12 mins 
 

Notes: 

-soak the sliced onions with iced-cold water for 30 mins to eliminate the sulfur compounds, which causes for strong taste of the onions. 
 -for crispier onion rings, chill before air frying.

HEALTHY GRANOLA BARS 

Simple, easy, yet perfect healthy and delicious snack loaded with dried fruits and nuts. 
 

Ingredients: 

DRY: 
- 1 ½ CUP ROLLED OATS 
- 150G (1 CUP MIXED NUTS AND DRIED FRUITS) 
** almonds, pecans, peanuts, cashew nuts, raisins, berries 
** can choose any of your favorite nuts and dried fruits 
- 25g (2 tbsp) pumpkin seeds 
- ½ tsp cinnamon powder (optional) 
- pinch of salt 
 
WET: 
- 1/4 cup coconut cooking oil 
- 1/2 cup honey 
- vanilla extract (optional) 
 

Cooking Time: 

Airfryer: 
160deg for 20-25mins or until golden brown
 

Notes: 

-preheat air fryer at 160deg for 5 mins 
-cool it down completely before slicing 
-these ingredients may yield 12-14 bars

MANGO OATMEAL BARS 

Delicious, creamy mango bars with crumbled oatmeal on top that are so easy to make at home.. 
 

Ingredients: 

CRUST: 
- 1 cup all-purpose flour 
- 1 cup quick cooking oats 
- 1/4 tsp salt -1/4 tsp baking soda 
- 1/4 cup brown sugar 
 
FILLING: 
- 1 cup + 2 tbsp fresh mango puree 
- 1 /2 cup (initial mix) condensed milk 
** + 2 tbsp condensed milk 
- 2 egg yolks 
- 1 tsp lemon juice or vanilla extract 
 

Cooking time: 

Airfryer:
160deg for 20 mins 
 

Notes: 

-preheat air fryer at 160deg for 5 mins 
-after mixing all the filling ingredients, give it a taste. Add more condensed milk if you like it extra sweet. Because some mangoes are sweet while some are not. 
-Refrigerate the mango bar for at least 4 hours or overnight for perfectly nice and neat slices. 
-keep the bars in an airtight container and last for 4-5 days in the fridge.

- 2 eggs (separate yolks and egg whites) 
- 1/4 cup cheese (cheddar and mozzarella) 
- 1 tbsp spring onion 
- 1/8 tsp salt 
- 1/8 tsp black pepper 
- 3 tbsp Parmesan cheese 
- 3 tbsp milk 
- 1 tbsp unsalted butter 
 

Garnishing: 

- grated cheese (cheddar and mozzarella) 
- paprika 
- Parmesan cheese

160deg for 20 mins or until inserted toothpick comes out clean 
 

Notes: 

-I preheated my air fryer for 5 mins at 160deg 
-gently fold in the whipped egg to the potato mixtures. don’t overmix 
-do not open the air fryer basket before 20 mins. This is to prevent souffle from collapsing

AIR FRYER RECIPE: APPLE PEACH BREAD PIE / HOW TO MAKE APPLE PEACH FILLING / EASY SNACKS


APPLE PEACH BREAD PIE 

 
A simple and easy recipe yet delicious snacks. Try this at home and everybody will love it. 
 

Ingredients: 

Crust: 
- Sliced bread Filling: 
- 1 cup diced apples 
- 1/2 cup diced peaches 
- 1/2 tsp cinnamon powder 
- 1/8 tsp salt 
- 2 tbsp brown sugar 
- 3/4 cup peach syrup 
- 1 tbsp lemon juice 
- 1 tbsp cornstarch 
- lemon zest Garnish: 
- melted butter 
- brown sugar 
- whole egg (sealing the edges of the bread) 
 

Cooking Time:

Air fryer: 
180deg for 10-13mins 
 

Notes: 

-I don’t preheat my air fryer 
-please check the bread pie after 10 mins. This is to check the color of the pie 
-I used peach in can with light syrup 
-since we’ll be using the peach syrup, I suggest to give the filling a taste before adding sugar. Fruits in can loads with sugar. 
-If using diced apples alone, you may replace the syrup with water then add sugar according to your taste.

AIR FRYER RECIPE : TUNA CHEESE BUNS / HOW TO MAKE TUNA BUNS IN AIR FRYER


TUNA CHEESE BUNS 

 
Soft and fluffy homemade buns that are great for breakfast and snacks. 
 

Ingredients: 

Dough 1: 
- 1/4 cup bread flour 
- 1/4 cup warm milk (110deg) 
- 1 ¼ tsp instant dry yeast 
- 1/2 tsp sugar 
 
Dough 2:
- 1 ¾ cup bread flour 
- 5 tbsp unsalted melted butter 
- 1/2 tsp salt 
- 1 whole egg 
- 1/4 cup milk 
- 2 tbsp sugar 
 
Filling: 
- 2 tbsp mayonnaise 
- 2 cans of tuna (brine sandwich) 
- sprinkle of salt and black pepper to taste 
- mozzarella cheese 
 
Egg wash: 
- 1 whole egg 
- 2 tbsp milk
 

Cooking time: 

Airfryer : 15-17 mins at 130deg 
 

Notes: 

- preheated my air fryer for 5 mins. 
-too much mayonnaise, resulted to watery filling 
-drain and remove excess water of tuna 
-dough 1, let it rest for 30 mins 
-dough 2, let it rest for 1 hour 
-after shaping, let the buns rest for 30 mins to 1 hour 
-to avoid too much flour, at initial mix, you may reduce about 2 tbsp of flour. if you find your dough is still sticky, then add flour in portions. Because sometimes, we made mistakes in weighing ingredients, especially those who are using cups, just like me. 
-storage of the buns: 2 days at room temperature 4-5 days at the refrigerator 
**I prefer keeping it in the fridge, because of the mayonnaise. 
-this recipe can make 16 yields of buns.

Veggie Balls in Air Fryer 

 
This simple vegetable balls are crispy outside and soft and creamy inside because of the parmesan and mozzarella cheese. The veggie balls are combination of finely minced broccoli, carrots and mashed potatoes. Many of us, including me, can’t eat broccoli alone. So, I just added some vegetables, to make it flavorful. The flour batter will coat the balls and to keep them in shape when cooking. For the process of cooking, you can deep fry, bake, or air fry, whichever you prefer. 
 

Ingredients: 

- 1 ½ cup finely minced broccoli 
- ½ cup mashed potato 
- ½ cup finely minced carrots 
- ¼ tsp salt 
- ¼ tsp pepper 
- 2 tbsp potato starch 
- 2 tbsp parmesan cheese 
 
Flour Batter: 
- 1 cup flour 
- ¾ cup water 
- 1/8 tsp pepper 
- ¼ tsp paprika 
- ¼ tsp baking powder 
 

Others: 

Mozzarella cheese for filling Breadcrumbs 
 

Cooking Time: 

Air fryer: 
180deg for 10 mins (initial)

-boil the broccoli for 2 mins and ice bath to stop from cooking

Sugar-Free Banana Carrot Cake 

 
Are you avoiding cakes because of the sugar content? Then maybe try this healthy banana-carrot cake that are soft, moist, and flavorful cake. With my version, instead of using sugar, I replaced it with raw honey and an overripe bananas as additional sweetener. I also added Greek yogurt that gives extra moisture to the cake. I also added oats flour which I grinded from a blender. These cakes are really great with hot coffee and teas. 
 

Ingredients: 

Dry Ingredients: 
1 ½ cup flour
 ½ cup oats flour 
1 ½ tsp cinnamon powder 
1 tsp baking soda 
¼ tsp salt 
¾ cup shredded carrots 
 
Wet Ingredients: 
1 cup mashed banana (overripe) 
¼ cup Greek yogurt 
¼ cup canola oil 
1/3 cup fresh milk 
½ cup raw honey 
2 eggs 
1 tsp vanilla extract (optional) 
 

Cooking Time: 

Airfryer 
5-inch loaf pan – 140 deg for 25-30 mins 
7-inch loaf pan – 140 deg for 45-50 mins 
 
Oven: 
180deg for 40-45 mins 
 

Notes: 

-use overripe banana for extra sweetness of the cake 
-use raw honey or organic honey 
- if you do not like honey, you may replace it with unrefined brown sugar or coconut sugar 
-I do not pre heat my air fryer. 
-cake is done when inserted toothpick comes out clean. 
-the cooking time depend on the size of your cake. So, make a toothpick test 5 mins prior to the time. 
-you can keep the cake in an airtight container and reheat in the microwave

STUFFED CHICKEN WITH PARMESAN SAUCE 

 
This dish is similar to chicken cordon bleu. Instead of ham, I switch it to spinach to make it healthier. The parmesan sauce added to the creaminess of the chicken. Crispy, tender, and juicy chicken rolls that are great for dinners and special occasions. This dish is so easy to make, and will surely loved by everybody. 
 

Ingredients: 

- 1 pc chicken breast 
- 1 cup spinach 
- minced garlic 
- minced onion -salt and pepper to taste 
- 1 tbsp unsalted butter (room temperature) 
- 1/4 cup grated cheese (mozzarella and cheddar cheese) 
 
Parmesan sauce: 
- 1 tbsp olive oil 
- 2 tbsp unsalted butter 
- 1 tbsp flour 
- 1 cup warm milk 
- 1/8 tsp salt 
- 1/8 tsp black pepper 
- 3 tbsp parmesan cheese (depend on your taste) 
 -1 egg 
- breadcrumbs 
- flour 
 

Cooking Time: 

AIRFRYER: 
160deg for 15 mins 
180 deg for 10 mins (to make it crispier) 
 
OVEN : 
180deg for 20-25 mins or until golden brown 
 

Notes: 

-I do not pre heated my air fryer 
-I used frozen spinach so I just soaked it with warm water for 30 minutes then remove excess water 
-if using fresh spinach, boil it for a minute then rinse with cold water then remove excess water 
-You can also use the cooking oil spray before cooking at the air fryer.

Airfryer Potato Casserole with Creamy Spinach Sauce / Airfryer Recipe / Easy Recipe

 

Potato Casserole 

Potato casserole is usually made with potatoes, cheese and cream. With my version, I added spinach and made it like a lasagna style in assembling in the pan. This time, I baked it with my airfryer and still it turns out great!! It’s an easy recipe. Try this at home... 

Ingredients: 

- 3 medium sizes of potatoes (scalloped slices) 
- 1 tbsp garlic 
- 3 tbsp onion 
- 1/2 cup ground chicken breast 
- 1/2 cup grated cheese (mix of mozzarella and cheddar cheese) 
- 2 or 3 tbsp of grated mozzarella for toppings 
- 1/4 tsp salt 
- 1/4 tsp black pepper 
 
White Sauce: 
- 2 tbsp unsalted butter 
- 1 tbsp flour 
- 3/4 cup warm fresh milk 
- 200ml cooking cream (at room temperature) 
- 1 cup spinach (blanch for a minute then remove excess water) 
- 1/4 cup grated cheese (combination of cheddar and mozzarella cheese) 
 

Cooking Time: 

Airryer: 
140 deg for 20 mins with aluminum foil 
140 deg for 20 mins without foil 
160 deg for 5 mins to make it golden brown 
 
Oven: 
170deg for 30-40 mins until golden brown 
 

Notes: 

-Soak the sliced potatoes in salt water for 30 mins.
-I used frozen spinach, so I just soak it with warm water, then remove the excess the water 
-If using fresh spinach, boil it for a minute then then remove water. 
-I used 6-inch baking pan for airfryer 
-Do not add too much salt since cheese are already salty

How to Make a Caramel Creme in an Airfryer? / Airfryer Recipe


 

Caramel Crème 

 
Caramel crème is a custard dessert with a layer of caramelized sugar on top. An easy dessert that surely loved by everybody. This mouthwatering dessert has smooth, silky custard that melts in your mouth. 
 
 

Ingredients: 

Caramel sauce: 
-¼ cup white sugar 
-2 tbsp water (lukewarm water) 
 
Custard 
-200ml Fresh milk 
-1/4 cup white sugar 
-1 whole egg 
-1 egg yolk 
-lemon zest or vanilla extract 
 

Notes: 

-Preheat the fryer at 145deg for at least 3 mins. 
-Low heat only in making the caramel sauce to avoid sugar from burning. 
-Whisk the custard mixtures slowly so you won’t create any bubbles. 
-Use a fine strainer or cheesecloth to remove lumps. 
-Bain marie method. It should be at low temperature only to avoid bubbles in the custard and won’t taste / cook like scrambled egg 
-Custard is done when inserted toothpick comes out clean. 
-The custard is slightly jiggle in the center when shaken. It will continue to cook once removed from fryer or oven so do not overcook them. 
-Check the water after 35 mins of steaming (toothpick test) since in the airfryer, water evaporates faster than the oven. 
-cooking time is always depend on the size of the custard. I used 4 ounces of ramekins. 
 

Cooking time: 

Airfryer: 145deg for 35-45mins 
Oven: 160deg for 40-45 mins

Pad Thai One of the signature dishes of Thailand is Pad Thai. A blend of sweet, spicy, and sour taste. This is also one of my favorite dishes so I decided to make my own homemade version. With my recipe, I added dark brown sugar because I wanted a little bit of brownish color to my pad thai. I also added, soy bean pastes instead of adding too much fish sauce. I hope you’ll try this at home. 
 

Ingredients: 

Pad thai sauce: 
- 1 or 2 tbsp chili paste (add more if you like it more spicy) 
- 1/4 cp palm sugar 
- 2 tbsp dark brown sugar 
- 2 tbsp fish sauce 
- 3 tbsp tamarind paste 
- 1 tsp soy bean paste 
- 1/4 cup lukewarm water 
 
Pad thai 
- sauce (the sauce I made is good for 150g pad thai noodles, but you may reduce it depend on your taste) 
- minced garlic 
- chop onion 
- shrimps 
- firm tofu (fried and sliced into chunks) 
- 150g pad thai noodles 
- 3 tsbp sweet raddish 
- 1 tbsp dried shrimps 
- 1 tsp chili powder

Cinnamon Rolls Homemade 

Cinnamon rolls that are so light and fluffy. It is long process but worth it to try. By the you can add ground nuts in cinnamon filling. 

Notes: 

** Too much flour, dough will become dry, hard to mix and rise. So use knife to level the cups. 
** Dough is done in kneading or mixing when dough is no longer sticking on your hands.
** When added too much flour and no enough water, use spray bottle and slowly spray it to the dough. Then knead again. 
** Covering the rolls with parchment paper helps to compressed the rolls without spilling the filling. And I found out that it is much easier to cut the rolls when we refrigerate it because of the firm texture. You can skip this process if you don’t want to. 
** I used unscented dental floss for easier way of cutting the rolls. 
** Cinnamon paste is much easier to spread to the dough. 
** Milk wash added colors to the rolls, but you can use any egg wash you prefer. 
** Let the cinnamon rest for at least 10-15 mins after baking. Spread the cream cheese frosting while rolls are still warm. 

Ingredients: 

Dough 1 

- 1/4 cup milk(110deg)

- 1 ¼ tsp yeast 

- ½ tsp sugar 

- ¼ cup flour 

Dough 2 

-1/4 cup milk (110deg) 

-1 egg 

-1 ¾ cup flour for initial mix 

-2 or 3 tbsp of flour while kneading or mixing (just add flour if still sticky) 

-1/4 cup sugar -1/2 tsp salt 

-2 tbsp unsalted melted butter 

-3 tbsp vegetable oil Cinnamon filling: 

-1 tbsp cinnamon powder 

-1/2 cup brown sugar (I used unrefined brown sugar) 

-3 tbsp unsalted butter(room temperature) 

Cream cheese frosting: 

- ½ cup cream cheese at room temperature 
- 2 tbsp unsalted butter at room temperature 
- ¼ cup powdered sugar (strain) 
- 1 tsp lemon juice Before baking: 
- 2 tbsp Milk (just pour the excess to the rolls) 

 

Baking Time: 

Airfryer: 140deg for 15-17mins 
Oven: 180deg for 20-25 mins until golden brown

Many of us have different version of grilled pork with different types of marinade sauce as well. With my version, I marinated my pork with the extracted juice of pears. The pears contain enzymes that tenderize meat, helps keep the meat moist and juicy once grilled. The longer the meat marinated with the sauce, the better. The meat will perfectly absorb the flavor of the sauce. Try this at your home, and you’ll never regret it. 
 

Ingrediets: 

- 1 Golden Pear 
- White Onions (half) 
- 1/4 tsp Ginger 
- 2 tbsp Soy Sauce 
- 1/2 tsp Sesame Oil 
- 4 or 5 tbsp Dark Brown Sugar 
- 1/2 tsp Liquid Seasoning

Tom Saap is a Thai dish. A hot and spicy pork ribs soup with a blend of sweet, salty, and sour taste. The broth filled with strong flavor of fresh galangal, lemongrass and kaffir lime leaves. With my version, I pre boiled my pork ribs to get rid dirt and excess fats, and to have clear and clean broth once cooked.

Creamy Carbonara / Homemade Sauce / Quick and Easy Recipe



Carbonara is an Italian dish that usually made with egg yolk, cheese, and bacon. With my version, I added cream and milk for additional creaminess of the sauce. 
 

INGREDIENTS: 

- 250g Spaghetti Pasta
- 150g Bacon
- 1 Egg Yolk
- 200 ml Cooking Cream
- 140 ml Evaporated Milk
- Garlic (Minced) 
- Onions (Minced) 
- 6 tbsp Parmesan Cheese
- Salt to Taste
- Ground Black or White Pepper
- 2 Tbsp Pasta Starch
 

Tips for the pasta: 

Check the pasta texture 2 or 3 mins before the cooking time. Texture should be al dente. Tender but firm bite. Reserved 1 cup of pasta starch. This will be use later to adjust the consistency of the sauce.  I do not rinse my pasta after cooking so the pasta will quickly absorb the sauce when I toss it with the sauce.

Tom Kha Gai (Thai Coconut Chicken Soup) / Quick and Easy Dish


Tom Kha Gai or Thai Coconut Chicken Soup is a simple, quick yet a delicious Thai dish. It is a blend of sweet, spicy and sour taste. The herbs and aromas of lemongrass, kaffir lime leaves, and galangal gave a soothing feeling and extra flavor to the broth. This soup has rich and creamy taste because of the coconut milk. Actually, this is a comforting dish especially during cold weather.

Sweet and Spicy Shrimps is inspired in sweet and sour dishes. A simple dish can be cook in less than 5 minutes. With my recipe, I added shrimps hacks on how to achieve moist and nice texture of the shrimps. And that is-- brine the shrimps before cooking!! After doing this method, I noticed that shrimps turns out nice, white and clean. Upon cooking, the shrimps are not shrinking, and you’ll hear some crunchiness with the skin the when cooking. For the taste, it has nice, firm and moist textures. In addition, doing this method, you can easily peel off the skin. We all know that some of us had a hard time peeling the shrimps. Airfryer Pandesal / No Egg, No Butter Bread / Airfryer Recipe / Cheese Pandesal


Pandesal is one of the popular Filipino bread that mostly served and eaten for breakfast, snacks or anytime as you crave it A hot pandesal is always best with hot coffee!! It is like dinner rolls, taste like dinner rolls, the only difference is that, pandesal is lightly dusted with breadcrumbs. With my recipe, I just used the classic ingredients, which are, flour, cooking oil, yeast, sugar, milk and salt. No egg, no butter. Why? Because I think, adding butter or egg might empower the taste and smell of the pandesal. I just wanted to taste and smell the aroma of yeast in freshly baked pandesal, which gave a delightful feeling. This pandesal is still soft and fluffy even up to 3 days!!! In addition, I added cheese as fillings of the pandesal, since people love spreading cheese with their pandesal. Anyway, here are some of my tips: When activating the yeast, the temperature is warm (110deg). Not too cold, or not too hot. This might kill the yeast. Adding sugar to the milk speeds up the process of activation. Place it in a microwave (off) or somewhere dark or warm place. When rising the dough, place it again in microwave (off). After cooling down the pandesal, you may put it in a airtight container or resealable bags and place it in your table or counter. Just reheat the bread in a microwave anytime you like. For the homemade breadcrumbs, just toast the loft bread (I have used whole wheat bread), then use food processor for grinding. Thank you for watching. I hope you’ll try this recipe.

Juicy Hamburger : An All-Time Favorite / Pan-Grilled Patty

 

Hamburger is an all-time favorite, consisting of ground beef, cooked in either pan or grill and garnish with some vegetables and sauce. In my version, I did not add any condiments, flavors, or binders in my patties, because I do not like empowering the flavor of the beef. After shaping my patties, I chilled it for at least 30 minutes, to keep them in shaped when cooking. After chilling, I thaw it for 10 minutes. Before grilling, I seasoned the patties with salt and pepper. Doing that process can guarantee nice and juicy patties. Anyway, I grilled my patties with my nonstick pan, grilled it for 5 minutes each sides for a medium patties. Here is the guide for patties temperature and time: 

Well Done          - 7-8 Minutes per side at 160C 
Medium Well     - 6 Minutes per side at 150-155C 
Medium              - 5 Minutes per side at 140C-145C 
Medium Rare     - 4 Minutes per side at 130-135C 
Rare                    - 3 Minutes per side at 120C-125C

Dinner Roll is a round shape bread provided as a side dish, as part of the meal and as snacks as well. This is made of flour, butter, milk, egg and yeast. To make it more delicious and creamy, I added cheese to the usual ingredients. And it turns out great!! I baked it with my air fryer. The bread is still fluffy same as baked in an oven. Ingredients: 

activate yeast: 
- 1 tsp yeast 
- 1tsp sugar 
- 1/2 cup warm milk (110deg) 
 
dough: 
- 2 tbsp white sugar 
- 3 tbsp unsalted butter 
- 1/2 tsp salt 
- 2 egg yolks 
- 4 tbsp Parmesan cheese 
- 1 cup + 6 tbsp flour (initial mix)

Tips:

-When kneading the dough, I rub an oil on my counter and palm to avoid sticking. 
-To test if the dough is done in kneading, the dough must be elastic, does not rip/tear when stretching / not sticky 
-Put the yeast mixtures in a microwave (off), cover it with towel, or place in a warm or darker place
 
Cooking Time in Air fryer 160C for 12 mins 130C for 3-5 mins until golden brown 
If you use oven: 180C for 20-25mins

Roast Chicken is a particular dish that loved by everybody. Chicken is roasted with its own fats. However, there are some methods to achieve tender, and juicy roasted chicken. With my recipe, I prepared brine solution, consists of salt, pepper, sugar and boiled lemongrass. The salt in the solution will dissolve the muscle fibers of the chicken while brining resulted to tender and juicy chicken once cooked. The lemongrass adds flavor as well. I also stuff the chicken with lemongrass, garlic and lemon. The rub mixtures that I added a bit of olive oil will get the chicken crispier. I used an airfryer in roasting the chicken which resulted to perfectly golden brown and crispy outside and tender and juicy inside.

Pesto Sauce is quick and easy sauce to make. It is traditionally consist of garlic, nuts, salt, basil leaves and parmesan cheese blended with olive oil. It has high fat content, however, it is still healthy because that fat is unsaturated. In moderation of consumption, the fats from nuts and olive oil is good in cholesterol improvement. With my recipe, for additional nutrients purposes, I added spinach. I blanch it for few seconds to remove the bitter taste and remove excess water preventing the dish from getting soggy. Spinach is very nutritious like iron, magnesium, fiber, and vitamin A. The bright green color of the spinach, adds color to the sauce. The citrus taste from lemon juice and lemon zest for an extra flavor. Pesto sauce will last up to 5 days stored in airtight container in refrigerator. I hope you’ll try this recipe. With my recipe, I chilled the chicken before frying it because I wanted it to keep it in shape. I pan fry the chicken first, before roasting it in airfryer/oven, which adds to the crispiness of the chicken but juicy and tender inside. Sushi is another version of sushi roll. A sushi that you don’t have to roll the rice and other ingredients, but instead layering it in a baking pan and bake it for a few minutes. With my version, I made two kinds of salad that have different variations and flavors and assembling it by layer. I just put small amount of sushi rice, because I wanted to make the taste more flavorful even the creaminess of all ingredients, not just the rice. Layering the salads, makes the sushi more delicious and surprising, since the two salads have different flavors. Wrapping the baked sushi with dried seaweeds add flavors too. How to Make Skinless Longanisa 

Longanisa is one of the sausage version of Filipinos. There are many great variations and flavors of these. Longanisa is a mixture of lean pork and fats, along with garlic, brown sugar, atsuete, soy sauce and others. With my version, I added cornstarch to the mixtures, as binder and to keep the longanisa juicy when frying. I also substituted the atsuete to paprika, since that was only available with me that time. Paprika, added colors and flavors too. I have also used natural brown sugar; it is like a powdered form sugar, which have a dark color. The usual skin of longanisa is made of pork intestine, but since i don't have that one, I just used the plastic or cling wrap to keep it in shape. But you may also use baking sheet or wax paper. Freezing it will keep the longanisa in shape when frying. Longanisa is a perfect match with fried rice and eggs, with ketchup and vinegar as dipping sauce. I hope you like my video.

French fries is one of the most favorite snacks in the whole world. Everybody loves French fries... However, it is considered unhealthy because these deep-fried potatoes have lot of salt and Tran’s fat. That's why I made my version to make it healthy. There are two methods. Frying through air fryer, which is trending nowadays, and second is, pan-fried French fries. Quite a bit of olive oil, since we are making healthy french fries. Since it is pan fried, you are cooking your potatoes coming from the heat of the pan, and toasting it over medium heat. Sprinkle with dried parsley and garlic powder to make your fries flavorful. I also made dipping sauce, mixtures of light mayonnaise, fresh coriander/parsley, fresh lime juice and minced garlic.

Fresh Lumpia or Lumpiang Sariwa is a Filipino dish, consisting of stir fried vegetables and meat, wrap with egg wrappers. The sauce, which is sweet and thick, made the fresh lumpia more interesting and delicious. With my recipe, I added shrimps and tofu as additional fillings and for the sauce, I added peanut butter to make it more flavorful and the ground nuts enhanced the nutty flavor. For those who are on diet, you can omit the ground pork, since this dish already have tofu. You can also add sweet potato.

So if you are on diet, look for wraps that are trans-free and contain whole wheat. Since I love salad, I just thought of upgrading my salad, and combining it with the wraps. In my recipe, to make it healthier, I added some vegetables, boneless chicken, and salad dressings that made of olive oil and lemon. The light mayo and cream cheese with different herbs, gives more flavorful taste in the salad wraps. So watch and try it.   

NOTE: 

-For the chicken, sprinkle it with salt, black pepper and dried parsley before pan grilling. 
-Keep the salad dressings in the fridge and will last up to 3 days. 
-After reheating the tortilla wraps, cover it with damp paper towel to keep it moist while preparing the salad fillings.

Stir Fried Crab Curry is one of the popular dish in Thailand and quite expensive in some restaurants. Therefore, I decided to make my own version since I am crab lover. I made my own version to make a friendly budget pancit noodles. I substituted meat with sardines for healthier version. Eggplant patties is also similar with “TORTANG TALONG”, a popular dish in the Philippines, made of grilled eggplant dipped with beaten eggs. On my version, I made it like a burger-style patties. I added firm tofu, as substitute of pork or beef. I freeze the patties to keep them in shape when frying and any excess of it can last up to 1 month. Freezing the patties before frying gives extra crispy texture outside but tender and juicy inside. In addition, I made mushroom gravy as dipping sauce for more flavorful patties. The usual ingredients of the gravy is butter, but since I don't have one, I substituted it with olive oil. At first, i am not sure, if it will going to work, but… IT WORKS!!!... It taste like a real gravy...This patties is good combination with rice. So try it now... Hope you all like my version of eggplant patties…
