How to Make Healthy Vegetable Rolls with Peanut Sauce 

A Vietnamese fresh spring roll, consisting either pork, shrimps, tofu, rice noodles, and variety of vegetables, wrapped with rice paper. 

An appetizer dish serve with dipping peanut sauce. In my recipe, I've used shrimps, i boiled it first, peeled, devein and cut in half. 

 

Note: 

Just add nuts when the sauce is served. Peanut sauce will keep in the fridge for 3-4 days, it can be reheated in the microwave or just take out the sauce out of the fridge for 30 mins before serving them. To maintain the moist of the rolls, you can cover it with damp kitchen towel or place a lettuce leaf in between the rolls to avoid from sticking together.
