Potato Casserole
Potato casserole is usually made with potatoes, cheese and cream. With my version, I added spinach and made it like a lasagna style in assembling in the pan. This time, I baked it with my airfryer and still it turns out great!! It’s an easy recipe. Try this at home...
Ingredients:
- 3 medium sizes of potatoes (scalloped slices)
- 1 tbsp garlic
- 3 tbsp onion
- 1/2 cup ground chicken breast
- 1/2 cup grated cheese (mix of mozzarella and cheddar cheese)
- 2 or 3 tbsp of grated mozzarella for toppings
- 1/4 tsp salt
- 1/4 tsp black pepper
White Sauce:
- 2 tbsp unsalted butter
- 1 tbsp flour
- 3/4 cup warm fresh milk
- 200ml cooking cream (at room temperature)
- 1 cup spinach (blanch for a minute then remove excess water)
- 1/4 cup grated cheese (combination of cheddar and mozzarella cheese)
Cooking Time:
Airryer:
140 deg for 20 mins with aluminum foil
140 deg for 20 mins without foil
160 deg for 5 mins to make it golden brown
Oven:
170deg for 30-40 mins until golden brown
Notes:
-Soak the sliced potatoes in salt water for 30 mins.
-I used frozen spinach, so I just soak it with warm water, then remove
the excess the water
-If using fresh spinach, boil it for a minute then then remove water.
-I used 6-inch baking pan for airfryer
-Do not add too much salt since cheese are already salty
