An interesting recipe of an eggplant that are easy to make. It can be an appetizer or main dish as well.
Note:
- Soaking the eggplant with salt water will eliminate bitterness.
- Don’t add too much salt since some cheese are salty.
Ingredients:
- 1 big Eggplant
- 2 tbsp Breadcrumbs
- 3 tbsp Fresh milk
- 2 tbsp Tomato paste
- ¼ cup Ground pork
- ¼ cup Red bell pepper
- 1 tbsp of Garlic
- 2 tbsp Onion
- ¼ tsp dried Parsley
- ¼ tsp dried Basil
- ¼ tsp Black pepper
- 1 tsp Liquid seasoning
- ¼ tsp Salt to taste
- ½ tsp Sugar
- ½ cup Cheese for the fillings
- ¼ cup for the toppings
Sprinkle of Parmesan cheese (2tbsp)
